Dawn Minty: Memorial Day calls for casual party

Pool-side cocktails, family cookouts and picnics are the staples of casual entertaining.

Memorial Day kicks off this season of relaxed parties where burgers and plastic plates replace oven-baked dishes and fine china.

This Bobby Flay recipe for Green Chili Cheeseburgers is full of flavor and each guest can add as much, or as little, spicy mayo, as he or she wants.

As the heat index rises, remember that spicy food will actually make you feel cooler.

Green Chili Cheeseburgers

4 servings

Prep Time: 20 minutes

Cook Time: 8 minutes

1/2 cup mayonnaise

1/4 cup chopped green chilies, undrained

2 cloves garlic, chopped

2 tablespoon pickled jalapeno peppers, finely chopped

2 tablespoon chopped fresh cilantro

1-1/2 pounds ground beef

2 tablespoon canola oil

4 slices Monterey Jack cheese (about 4 ounces)

4 sesame seed hamburger buns

Process mayonnaise, green chilies and garlic in food processor until smooth. Remove to medium bowl, then stir in jalapeno peppers and cilantro. Season, if desired, with salt and black pepper. Cover and refrigerate at least 30 minutes.

Meanwhile, shape ground beef into 4 burgers. Brush each burger on both sides with oil, then season, if desired, with salt and black pepper. Grill, turning once, 8 minutes or until desired doneness. Top burgers with cheese and cook until cheese is melted. Arrange burgers on buns, then top with a dollop of green chili mayonnaise. Serve remainder of mayonnaise in small bowl for dipping.

Uptown Wings is now open on Broadway in Columbus. Wings are, of course, the main food served. Wing sauces include mild, medium and inferno as well as lemon pepper, barbecue and teriyaki. Chicken finger platters and fried and grilled chicken salads are also on the menu. Side dishes include cole slaw, fries and side salads. For starters, try corn dogs, fried mushrooms and fried mozzarella sticks.
