I don't intentionally overcook poultry, but I always seem to burn my birds. The idea of eating an undercooked turkey (or worse, serving it to friends) is so scary that I'm terrified to take my bird out of the oven until I've given it "just a few more minutes" multiple times.
You might be surprised that this does not make for moist, delicious, fall-off-the-bone turkey. With Thanksgiving fast approaching, it's time to get some help.
For chronic over-cookers like me, some chefs recommend bathing the bird in a brine before roasting. I found a video here by Food Network chef Tyler Florence. I knew this was meant for me when he started the lesson with a song "Dried Out Turkey Blues." Obviously I am not the only poor soul to suffer from this condition. Tyler promises that brining the turkey will keep it moist even if nervous cooks keep it in the oven too long.
