It's not summer yet, but I can feel it coming. The warm temperatures bring with them my favorite outdoor activity — a picnic. I love the outdoors, you see, but I'm not an outdoorsy person. I love sitting outside sipping wine and reading magazines. I hate camping — unless you consider staying at a hotel to be camping.
Here in the South we have a limited time to enjoy picnics. Faster than we can blink, these perfect 70 degree days are going to turn into hot, humid, 90 degree days. Saturday is going to be nice (if a bit windy) weather for a picnic. Make some food, head to your favorite park and have a little nap on a comfy blanket.
You can take a basket of cold fried chicken, deli sandwiches or whatever your favorite outdoor picnic food is. But, if you want to try something different, make my steak salad sandwiches. I've taken them to several Steeplechase events (the ultimate picnic) and my friends have given them rave reviews.
Steak salad sandwiches
1 pound cooked steak cut into 1/2-inch pieces
2 tablespoons drained capers
2 minced gherkin pickles
2 tablespoons minced red onion
1 tablespoon Dijon mustard
5 tablespoons mayo
Combine capers, pickles, onion, mustard and mayo in a small bowl. Slice a baguette into sandwich-size portions. Add the steak to the dressing and make sure steak is well-coated. Fill the sandwiches with the steak. Enjoy!
I like to wrap each sandwich in parchment paper and then place each in its own plastic sandwich bag before storing in a cooler. Add decorative ribbon to the plastic bags, if desired.
