After a rain-soaked weekend and a chilly Monday morning, I need some comfort. Since the sun seems unwilling to shine its warm, soothing rays, I'm going to have to find comfort in my warm and cheery kitchen. Comfort food, that will warm my heart and my stomach.
There are two main problems with popular comfort dishes. 1) They take a long time to make. On a busy Monday evening, I don't have hours to slow-cook meat or bake a lasagna. 2) They're fattening. Sure, it's cold today but swimsuit season isn't far away. This is no time to pack on the calories.
