Sparkly, colorful PEEPS line the shelves of grocery and convenience stores at Easter. Even people who don't like the marshmallows are tempted to bite into those cute little chicks and bunnies. PEEPS are so adorably springy that they're the perfect little treat to use to create whimsical food art. Use your food art to create an Easter table centerpiece or garnish your dessert plate.
When I showed fellow Ledger-Enquirer blogger Sonya Sorich a photo of my Butterscotch PEEPS nests, she was surprised to learn that I'd used butterscotch chips instead of chocolate chips. This made me do a little google search to discover other variations of these tasty little treats. Links to two that seemed particularly interesting are below my recipe. Enjoy!
Butterscotch PEEPS nests
2 cups butterscotch chips
1 cup peanut butter
2 cups chow mein noodles
Jelly beans or cadbury eggs or mini cadbury eggs
PEEPS, Chicks, if available
Line a baking sheet with waxed paper. Place butterscotch chips and peanut butter in a microwave-safe bowl. Heat for 30 seconds. Stir, and repeat, until butterscotch chips and are melted. Stir in chow mein noodles until fully coated.
Scoop out a tablespoon or more, place on a prepared baking sheet and form a nest shape with your fingers.
Place a few jelly beans or mini Cadbury eggs in the center of each nest for eggs. Set a chick peep on top.
Refrigerate until firm.
