Chicken and Broccoli Rice

2-3 cups cooked chicken, cut into bite-size pieces

One 14- 1/2 ounce can chicken broth

2 cups instant white rice, uncooked

8 ounces Velveeta cheese, cut into small cubes

One package (10 ounces) frozen chopped broccoli, thawed (can quick thaw in microwave)

Combine chicken with broth in a saucepan or skillet and bring to a boil.

Add rice, Velveeta and broccoli; stir, cover and remove from the heat. Let stand ten minutes then, stir until the cheese is completely melted and mixture is well blended. Serve immediately.
