Stuffed peppers are one of the quick-fix meals my husband and I are constantly making for dinner on busy weekdays. We simply take two large bell peppers, chop off the tops and steam the peppers for about three minutes each in a pool of water in the microwave. Three minutes is enough to soften the skin while keeping the peppers crisp.
In a saute pan we put a couple tablespoons of olive oil (sometimes the garlic infused kind) and add whatever chopped veggies we have to the pan. This is usually onion, the pepper tops, another pepper and a zucchini or squash. When the veggies have softened, we add some sliced turkey kielbasa to the pan. Then I nuke some minute rice.
We add the rice to the veggie and sausage mixture and add a few fresh herbs (We love thyme). We stir for a few second until everything is well combined and then we assemble our stuffed peppers. Add a tossed salad and a nice piece of crusty French bread and you've got a quick and easy meal.
