My husband concocted this Strawberry Marshmallow Vodkatini recently when we had a surplus of strawberries. Fresh local strawberries are so delicious right now that I bought too many. Some were getting to that stage where they look a little dry but haven't developed any bruised spots. This cocktail is perfect for those strawberries.
This is a strong drink, almost all alcohol. So feel free to use just one ounce of marshmallow vodka or add sparkling water or lemon/lime soda and serve over ice in a tall glass. Another variation my husband experimented with was 2 ounces of cotton candy vodka in place of the marshmallow vodka and 1/2 ounce triple sec in place of the Midori.
Whatever variation you choose, make this on Friday evening and your weekend will have a delicious beginning! Enjoy!
