Today's instructional video features Chef Austin Scott, the culinary arts teacher for the Muscogee County School District. This is his final video lesson in this series about basic knife skills.
Today, Scott explains what a mandoline is and how to use it.
A mandoline is a handy kitchen gadget, but one that you have to be very careful using.
It boasts razor-sharp blades that are great for julienning veggies, which saves a lot of time if you're cutting a lot of them.

Switch the blade and you can batonade a potato, making mounds of french fries in minutes. Again, saving a lot of time.
Scott recommends that if you're new at using the mandoline, to use the guard (to save your fingers from being sliced) and to go slowly.
