Smokey ribs, tangy potato salad and peach cobbler headline the Zombie Pig BBQ in Columbus
A visit to Zombie Pig BBQ on Veterans Parkway last week as part of Restaurant Week in Columbus found me with a plate so full with delicious food that I had to tap out.
The Restaurant Week special seemed like a good place to start. It came with an entree, accompanied by a side, some BBQ nachos, and Peach Cobbler. For the main course, I chose the BBQ ribs that were some of the largest ribs I’ve ever seen in my life. Juice dripped from the smokey ribs as the owner chopped the fresh slab into single pieces.
My abnormally large hands seemed childish compared to the size of these ribs. As I bit into the first rib, the smokey flavor and hint of sweet and spicy from the BBQ sauce spread across the top made me repeat the phrase: “These will do.”
To accompany the ribs, the potato salad called my name. The potato salad at Zombie Pig is unlike any of the mayo, mustard and relish based potato salad’s many southerners may be accustomed to. Zombie Pig’s tangy potato salad with hints of dill flavor and creamy texture tastes amazing and is a perfect addition to any meal.
Served alongside the main course and side was a basket filled with crispy tortilla chips, nacho cheese, barbecue and green onions. I stacked all of the ingredients onto a singular chip and bit down into nostalgia from my college years.
BBQ nachos are a staple at Alabama football games in Bryant-Denny and the nachos at Zombie Pig didn’t disappoint. The barbecue’s smoky flavor paired well with the salty and cheesy nacho cheese sauce. The green onions paired nicely with the dish and gave it a fresh flavor with just the right amount of bite.
I finished the meal with the peach cobbler. Having been born and raised in the South, the one cardinal sin I’ve committed is never having tried peach cobbler in my 24 years. The peach flavor was evident in every bite and wasn’t overshadowed by the sweetness of the dish with the cinnamon bringing the experience to another level.
Each bite of the cobbler was light and fluffy with the slices of peaches being juicy and fresh.
I completed the meal with some great sweet tea. I made my way to the front ashamed that I couldn’t finish the meal in one sitting and asked for a to-go box. I packed up the food and had an amazing dinner that night of the unfinished food.
