How to handle a concession stand

Joanne Cavis of the Georgia Cooperative Extension Service has some tips for those who will be working in concession stands at youth sporting events this fall.

She says volunteers come and go and that means a lot of different hands handling the equipment, utensils and food. Workers should wash their hands and forearms using warm, running water and soap for at least 20 seconds before they start their shift. They should clean thoroughly between the fingers and around the fingernails and wash the hands again often while working.

Wear gloves while handling food.

Ice scoops should be kept in a clean location and avoid letting the handle of the scoop come in contact with the ice.

When preparing hot dogs, make sure they are kept at 140 degrees or hotter and cold foods should be kept at 40 degrees of colder.

Counters should be cleaned during any down time with hot, soapy water.
