‘This is a big tribute.’ New breakfast restaurant opens in Columbus
Breakfast has always been Logan Henderson’s passion. She fondly remembers sitting on the kitchen counter with her father, learning how to make scrambled eggs.
Often, though, they would experiment. Henderson said her father would make do with whatever was available in their pantry.
“For example, it could be something he might be out of, like maple syrup,” Henderson told the Ledger-Enquirer. “He might have honey and peanut butter in the pantry, and he would mix the two, and that would be our syrup.”
Mixing together flavor profiles during her childhood inspired Henderson’s concept for a new restaurant. She opened Breakfastology at 5156 River Road in Columbus on Wednesday. The restaurant is just a few doors down from her other business, River Road Nutrition.
Henderson’s father, John Allport, died in 2019 after being fatally shot in his home by his girlfriend. She said Breakfastology is a way to honor him.
“This is a big tribute to my dad,” she said. “… I think he would be proud. It sucks he can’t see it, but I know he’s up there, looking down, cheering me on.”
She describes the restaurant as having a “science” concept, emphasizing the mix-and-match flavor profile that inspires the Breakfastology menu. The restaurant serves standard breakfast items, like shrimp and grits and omelets, mixed in with unique combinations. Henderson’s favorite is the “Sweet Daddy,” named for her father. It’s a brioche French toast topped with a customer’s choice of protein and eggs.
“I don’t want [customers] to walk in and feel like they’re in a fast-food breakfast place,” she said. “I want it to feel a little bit more upscale with the option of having some grab-and-go items as well as dine-in service.”
Breakfastology will also serve bagels flown in from New York.
“There’s just a different texture to a New York bagel,” Henderson said. “Number one, they’re huge. So, you’ve got your oversized bagel. You’re going to get a lot for your money. The texture has that crisp on the outside, and then just a fluffy texture on the inside.”
Breakfastology and River Road Nutrition will remain separate businesses, Henderson said, although employees will be shared between them.
The restaurant is open now with a limited menu. Henderson said the menu will expand after their grand opening. A date for their grand opening had not been announced as of publication.
Breakfastology is open Wednesdays-Sundays from 7 a.m. to 3:30 p.m.
